HI,
I just got a HP Compaq Elite 8100 Convertible Tower from work that has just passed warranty from my company and I'm "recycling" it for a family in need. It came without memory and hard drive. I have a HD, but I'm wondering on the Memory. Can I just get any PC-10600 (ddr3 1333) 8GB kit (2x4gb)? Or is there some specific memory sticks that I need to look for?

I used this memory on my 8000 Elite CMT. Works great. I maxed mine out (16 GB).

If you need an operating system, you can order W7 64 bit recovery disks by calling HP at 1-800-334-5144.
Have the serial number handy to give to the customer services rep.

One word about memory for this box. It requires "low density" ram modules. In talking with the G.Skill reps, I was told that the G.SKILL Modules that end in NT are low density modules (i.e. the one you recommended: F3-10600CL9D-8GBNT). The modules that end in NS are high density modules (i.e. F3-1333C9D-8GNS) and are not compatible.
The rep also recommended the F3-10666CL9D-8GBNT module (which I believe it really the same, spec wise just PC10666 instead of PC10600). Either one should work fine.
