If this works anything like what I have seen, you can add / modify / delete the addresses, at least from within the Scan to Email Wizard.
If available, the setup might look something like the examples:
From the Printer Assistant shortcut icon on the Desktop:
From EWS:
Email Addresses for Scan-to-Email
Click the Thumbs Up to say Thanks!
Click Post that answers your question "Accept as Solution" to help others find it.
