I don't think you can. AirPrint is a very basic printing system and does not have many options available.

Hi 0rc,
To add to the notes above, It is not possible to print using black ink only by using Apple Airprint.
In order to get more control on the printout, you may use the HP ePrint Home & Biz app:
And to add further, Black ink printing can be solected for documents only (Office Documents, PDF, Web Pages, etc.) The option does not available for any picture file format.
