The most up to date HP Scan software allows you to scan to pdf.  Open the pdf with "Preview" and then copy and paste the text into "TextEdit".  This works just as well as the old iris software that is no longer bundled with HP Scan.

This  advice did the job for me in OS X 10.6.8 for an HP Photosmart 3180.  It should be marked as a SOLUTION.
