I know how to go through the settings when printing to change it to black and white only. I go to paper type/quality. I change to "Plain paper". and change to "Greyscale" and check "Black Cartridge only". I've tried to even save this as a setting, but for some reason it always reverts back to HP Premium Plus Photo as the paper type and goes to color. I can't get my settings to stay on greyscale with black cartridge only.

In 10.5 you can change your default print settings, but it is very techy. Do you have any desire to upgrade to 10.6 or 10.7? Those versions keep your last print settings as default.
If you do not intend to upgrade let me know and I will let you know how to do it on 10.5.

I am not planning on upgrading at this time. Please send me the info for 10.5.8
Thank you,
Nate

OK, here it goes:
1. Print something in the mode you want to use as default
2. Open Finder and go to [your home folder] > Library > Preferences
3. Click once on com.apple.custompresets.plist and then click Command-I
4. Check the box next to "Locked" on the resulting Info window.
5. Close the Info window and Finder.

1) I am unable to print on the setting I want. Please see in original post. Everytime I try to print with black cartridge only, it uses color.
2) I have no option under preferences that says com.apple.custompresets.plist. I have many similar options like com.apple.dockfixup,plist but not the one you state in your email.

Oh, I thought you could print in the mode you wanted but you wanted to make it default. I am a bit confused, can you describe in more detail? When you pick grayscale, what happens?

It allows me to select "black cartridge only" but it still prints using the color cartridge. I also have tried saving that preference down after setting it to greyscale and black cart. only, but when I try to use that setting, I see that it changed back to color and the paper type to "HP Premium....." . It seems like it won't allow me to use anything other than HP Premium paper and color. It allows me to click and change the settings, but they don't seem to be actually feeding through to the printer.

Oh, sorry, I misunderstood.
Let's make sure you have the right HP software. Download and install this: http://h10025.www1.hp.com/ewfrf/wc/softwareDownloa

I reinstalled via your above link and am having the same problem. It is like it will only allow "HP Premium Plus Photo Papers" as the option and therefore won't allow me to use the black cartridge only. If I try to change the paper type to anything else, it just reverts back to "HP Premium Plus Photo Papers".

OK, let's uninstall the HP software using the 'scrubber' option:
Go to Applications/Hewlett Packard/ click on HP Uninstaller
Click on Continue
Highlight your device on the left pane
Press and hold Control + Alt + Cmd keys on the keyboard simultaneously while you click on Uninstall <<<< This IS the Scrubber Option, there is no button labeled "Scrubber"
There will be a pop up that asks if you are sure you want to uninstall ALL hp software. (At this point, if you continue, any HP printers you have installed will need to be reinstalled)
Click Continue and let it finish
Restart your Mac
Now reset the printing system:
- Sys Prefs, Print & Fax
- Right (control) click in the rectangle listing your printers and select Reset Printing System.
WARNING - this will delete ALL of your printers!
Finally, install the software i referenced a couple of posts ago.
