So i know that the warranty covers certain damages and stuff like that, but when my waranty expires, do i still get updates in HP Support Assistant? or is that tied in with my warranty as well?

HP Support Assistant continues to work after warranty expires.You will  cease to get updates after awhile since HP doesn't release updates endlessly, but the other functions will work.

Please explain to me why I cannot get an extended warranty of 3 years.  I believe initially it was available for 139.00. Now they are only offering me 1 year for 129.00.  I am only out of warranty by 1 week.  If I purchase a warranty for one year consecutively for 3 yrs.  It will almost be the price that I initially paid for my Pavilion notebook.  Never the less, if am forced to buy a new laptop, it won't be an hp
