I just opened my HP Spectre x360 Convertible 15-bl0xx and i was able to plug in a monitor via HDMI and it worked fine. Then I updated the BOIS as per the alert and update I got through the HP Support Assistant, and now the monitor will no longer work. I know it is working as it is fine with other computers, but I can not get it to work with my Spectre now.

I reviewed your post and I understand that the monitor is not working after the bios update.

Follow the steps below and check.
Press windows key + P and choose duplicate or extend and check whether you get the display on the monitor.
If the issue persists, I recommend you to download and install the monitor driver from the manufacturer website.
If the issue persists, let me know the make and model of the monitor to provide you a more accurate solution.
