I find 5 minutes is too frequent and interferes with other programs. I'd prefer a 24 hour period at the witching hour... possible?

I think the short answer is "No". The timing is apparently tied to "idle" time.
From the provided SimpleSave User Guide, page 9:
About the HP SimpleSave Monitor
The HP SimpleSave Monitor appears in your system tray after the initial backup is
performed. The HP SimpleSave Monitor continuously watches your computer for
any new or changed files and automatically backs up those files after your computer
is idle (not used) for five minutes. Your HP drive must be left plugged into your
computer for the HP SimpleSave monitor to work.
Before disconnecting your HP drive, exit HP SimpleSave by right-clicking the HP
SimpleSave Monitor, then click Exit.
You could simply unplug the unit during those times that you do not wish it to disturb you. It is a bit extreme and means you must remember to reattach the device.

Dragon Tips:
You can use many backup software packages on a Storage Tower. Use, for example, the onboard Windows backup software to make backups over to the tower, use Microsoft Synctoy 2.1, or nothing at all (just copy files to it as desired) ... The disk is perfectly usable by itself as a storage device... a nice USB 3.0 storage device. You just need to move all the SimpleSave bits into a folder and keep them there out of the way is all. Smiling. (I have one of these little storage towers, and it is fine - I am not using the SimpleSave software.)
