Thank you very much for the detailed resolution. My Pavilion dv7 has also been very frustrating with this same problem with the CHKDSK issues.
I called HP Support and the tech also went through the steps to turn OFF the automatic Chkdsk at startup. I failed to see how turning off the automatic correction would prevent the problem from happening.
Of course, the problem returned. I then tried my best to diagnose all the errors that showed in the Event Viewer and the Reliability and Performance Monitor tools. After updating the BIOS, drivers, uninstalling services and uncessary programs for several hours, I rebooted the computer. Again the CHKDSK came up and was reporting the same problems as it reported nearly 7 hours earlier when it ran CHKDSK.
So, I called up HP Support again and this time the tech recommended the System Recovery from the recovery partition.
After that ran, it was stable for about a week, if that.
An earlier post in this discussion mentioned that the recovery partition is probably corrupt and causing the issue. Given the details of ChrisRBP's solution, I believe that is probably the case.
I've been wanting to upgrade this to Windows 7, so I'll see if that does the trick as well.

So I've purchased a new hard drive, and installed the OS (and HP software) using recovery disks purchased from HP. The same problems reappears. Something is wrong with either the HP applications or the copy of the OS we have received from HP.
Anyone at HP want to help me out or should I just go buy a Dell or something?
