How do I send a scanned document from my HP 5510 Photo smart printer to my 2 G I PAD, and then send onto a different email address? TMOD

Ok, so you have to scan the document to the IPad as a photo, move the photo to photo gallery, and then you can attach to your email from there.
This is the way I personally do it and it works for me.
Although I work for HP, my posts and replies are my own opinion and not those of HP.

You may scan from the iPad using HP ePrint Home & Biz. which available from the App Store.

Hi TMOD,
Have you installed the HP ePrint Home & Biz app? (available on the App Store) The iOS version of the app supports scanning, so you could scan from your iPad, save the scanned image, and then send or do whatever you needed to do to the file. Is this what you were asking about?
