I have the same problem... just bought it to replace the previous model (which had more features)!!! Scan button on the device, etc.
Please post if you find out how to do this.

Is there an answer for this?
I have a customer that is experiencing the same problem, and has called support twice. Neither time was helpful. One person said no, it cannot do it. The other support person went and tested it on one in the office and said it was successful, but couldn't tell the customer how to accomplish this.
Neither of us have been able to find any kind of documentation about it anywhere.

Through direct contact with HP and our our vendor, we were told this is a driver problem. Currently no eta on a fix. This will never function as needed for this issue, until the fix is published.

I found the solution on the Software and Drivers page on the HP website for this printer. First, I loaded the firmware update for the printer to bring me up to version 20090901. Then, I uninstalled my old printer driver and installed the Full Feature Software Driver (version 4.0). Finally, I installed the Scan to Upgrade Utility (version 1.0). The description of this Scan to Upgrade Utility is "This is a utility that fixes the Scan to application defect where multiple pages could not be saved into one file for PDF, Gif and Tiff file types." I normally scan to e-mail and one strange thing that I noticed is that it not only attached a file to my e-mail but it also placed a copy on my desktop. However, a reboot fixed this issue.

When I try to load the Version 5.0 it does not install for some reason. I have to go back and install the old driver. Any suggestions would be appreciated!!
