Software Can't Access "Grayscale - Black Cartridge Only" Option

I have an HP Officejet 5610 All-In-One Inkjet. I recently upgraded from XP to Windows 7. Using the HP Printer Install Wizard it downloaded a 360MB file and installed a driver for the 5600 series. Originally, we had an HP 5610-specific driver on a DVD but tha is lost. Perhaps that has been replaced by a driver for the entire 5600 series. The functionality seems to remain the same but we have one problem that we did not have prior to this OS upgrade yesterday.
Under Printer Properties, Color, Color Options, it will allow either the "Color" or "Grayscale-High Quality" settings but it will not allow "Grayscale-Black Cartridge Only".
100% of our printing is in "Black"; only. That is why we dropped Canon Printers; their inkjet printers cannot print in black only, even if there is so much as a dot of color on the page. Why will our HP 5610 not recognize printing from black cartridge only as an option? It worked fine yesterday. Is this a problem of the 5600 series driver vs. the 5610-specific driver or is there some other problem?
