I would like to be able to use black ink for printing about 99% of the time. Is it possible to set my HP 7520 Photomart
Printer to default to black ink in the most economical print option?

You may use black ink only for printing however color ink will still be used to service the printer. once the color ink is too low to maintain the printheads you will no longer be able to print till replacing the color ink.
You may set black ink printing by going to Control Panel > Devices and Printers.
Right click the printer icon and select Printing Preferences.
Click he Advanced button.
Set Print as Gayscale as Black ink only and confirm the changes.
