my new scanjet 2000 is grabbing two pages at a time. Is there some way to adjust the feed mechanism so this does not happen?

I do not believe you can adjust the mechanism in the scanner.

The following documents from your scanner Troubleshooting Section may be relevant:

Paper feed issuesSupport InformationOct 3, 2016
Unable to detect misfeeds and scan all pagesSupport InformationSep 30, 2016
Readiris Pro software does not detect a misfeed error messageSupport InformationSep 30, 2016

The information is worth reading; obviously brand new equipment should not be dirty so you can likely ignore the advice to clean the scanner.  (However,) you might check to ensure all the packaging bits are actually removed.  A tiny bit of paper or tape can cause havoc.

Paper:  Double-check the paper to ensure the paper weight falls within the allowed specifications:

Minimum paper weight
2000 s1:50 g/m2
3000 s3:40 g/m2
Maximum paper weight
2000 s1:180 g/m2
3000 s3:413 g/m2

Most new printers / scanners include phone support -- User Guide, Page 60 -- and if there is actually something wrong with the equipment, you need to report that to HP Tech Support.
