Scanning Glitch with 7410 All-In-One

I am finding that whenever I put an 8-1/2 X 11 document either on the glass,  it gives me an 8-1/2 X 14 output page and I have to crop every time I do a scan.  If I use the document feeder, I get oddball sizes depending on teh document beeing scanned (most are text documents).

 

Any ideas why I keep getting the larger page size?  I can't find an option to specify the oputput scan document size.
