HP 6310 All In One
I have a color document. The setting for HP is grayscale.
When I print, anything which is in color prints in varying shades of red
The black letters print black, which is what I want

Generally graphics are printed with the color cartridge, even if printing in grayscale. Look for a setting "Use black ink only". As for the red print, likely your cyan ink is running low.
