I believe that you would need an app to open and modify the document such as "Documents to Go" or the like.

One other options i can think of would possibly be the Hp Printer Control app. This app will allow you to scan documents or images and then give you an option to email, open in facebook, and even add to google docs. You can also save the files and then perform these functions later if needed.
One thing i did notice in my testing was that apps scanned and saved in the home and biz app do not show up in the printer control app. You can also use eprint to prnt to your printer on the go as well.
