Ive a hp elitebook 840 g6 and want to limit my charging percentage . I tried BIOS and set the option on "maximize battery health" but it still gets charged full. What can i do to limit my charging upto 80%.

Your machine is a business class machine. HP Battery Management software should handle that. Some numbers may cause confusion for example machine is set to charge 80% but number may say 100%, that means 100% of 80% etc... If you wish to make any change, please use the following Guide

So , even if i leave it plugged in when its fully charged , it wont affect my battery, right? . Will it automatically stop charging once it reaches 100%?
