My second monitor connected to the HDMI port is no longer displaying - this, since the latest Windows 11 update - or that seems to be that most obvious variable. Both monitors were working fine before but now it seems only the DisplayPort input/output works.

 

I have swpped inputs and both monitors work fine through DP but not HDMI. Multiple monitors returns no second monitor with that option in Display properties is selected.

Just solved it, I guess. Went into Devices and uninstalled the NVIDIA graphics driver and voila, the second monitor turned on a with an HDMI signal message on it. Not sure what exactly happened as the device still shows th edriver installed and no update available.
