The Z600 has two versions. Read up on that and look in your BIOS for the boot block date, and then post back with that. It will prove what version you have... I think you have the later better faster v2. Take a look at the two Z600 QuickSpecs attached below. Assuming it is a v2 you'll be able to choose from the ones in the later QuickSpecs and you'd start with wanting a processor or two that have 1333HHz top speed.

Now you know you have a Z600 v2, which is good.
I'd use two X5672 (hexacores) and search on eBay for them, lowest price including shipping, for "SLBYK" which is the Intel sSpec code for those.
You have a lot of homework to do and the resources are easily available. You may want to hire this out to a good computer shop but you also can do it all yourself if you learn about the process. This forum has a search feature for you to use, but it is not as effective as Google in many cases. You should use both.
Here's some tips:
Watch this and other Z600 YouTube videos: https://youtu.be/XCijDwqEDyM
google:
Best Z600 build
Best Z600 processors
Best Z600 memory
See my comment on memory. I posted also on exactly what I used in the forum:
