I'm currently using a HP Ultra slim 2013 docking station which has only 2 ports for 2 monitors. I want to add a 3rd monitor but not sure what type of adapter would be best to use with my current docking station. Any recommendations? Thank you

I would get one of the wireless adapters, either Microsoft or generic Micracast.
It would lag for games but would work fine for anything else. Avoid the 4k versions.
IMHO, the 2k version will make less of a demand on your PC's resources.
