There's no way to prevent it, and there's no "Undo" button, the column can be returned to its original default width by tapping Format, Column, -1, Enter. (This assumes that the column header is still selected after accidentally shrinking it). Or, instead of -1, you can use an actual number of pixels, of course.

Just a friendly warning: Miguel's tip is very handy if the column header contains no information, but be aware that pressing backspace on a column header not only resets the column width to its default, it also deletes everything else stored in the header (data and/or formula, name, and all formatting). It deletes all that immediately, without asking "Are you sure?", and there is no way to undo the deletion.

You have reason. In the header you must deleted all in the select column, but you didn't delete nothing, in the rest, if you press Backspace. Look, what if you explore the Backspace, is same to Column -1.

I just got an HP Prime (Nov 2014)
Playing with the SpreadSheet App I discovered the "pinch & spread fingers" method of adjusting the Column Width and Row Height.
Also, the ability to make Rows and Columns disappear with no obvious way to make them appear again.
However, this is not possible on the PC Emulator.
Then discovered another disturbing issue.
There is no Column Width or Row Height available in the Format Menu!!!
Even though the Help says there is and refers to it.
This is true on the actual machine as well as the Emulator
What's going on?

You can do this in the emulator. You need to hold down the right click button on the mouse, then the left down (while still holding the right) and move back and forth.
These other items appear when you are selecting the coloumn or row header. Selecting just a single cell doesn't apply the formatting to the entire row/column, so it doesn't make sure to appear anywhere except on the headers.
