Finally got it to work. I tried HP but there driver doesn't go beyond 10.7. Apple has a driver at https://support.apple.com/kb/dl1888?locale=en_US but his says it doesn't work with Monterey. I disabled Gatekeeper and it installed fine. Re-enabled gatekeeper and the printer goes on for another year. As it only gets used now for printing photo's and that infrequently at present and the ink vats are huge it will hopefully keep going until I run out of ink. Printer manufacturers obviously want you to buy new printers every couple of years at least but at £2k I expect it to last at least 20 years.

According to the HP compatibility chart (https://support.hp.com/us-en/document/c04486562) they only made a driver for up to v10.11 for Macs.
Have you tried connecting the printer to your Mac and see if it will load a driver for it?
Here's the HP Click driver that indicates it should work with V12. https://support.hp.com/us-en/drivers/selfservice/hp-designjet-z2100-photo-printer-series/3204963
I've never tried it so not sure it will do what you need. But shouldn't hurt to try it.
Or you could try the 10.11 driver and load it manually and see if it will work with your version of OS.
