we upgraded the HP Pavilion Desktop - with a 500-watt unit, with part number: L05757-800. this was to power the other upgrade RTX 2060. since this when playing graphics-heavy games such as Fortnight it thermal shuts down. What can we do to stop this happening?

There is no way your quality 500-watt L05757-800 power supply should ever thermally throttle itself whilst powering an RTX 2060, no matter how demanding a game you play.
Unless (assuming your power supply is not defective):
Its rear-to front airflow is restricted or compromised in some way: check if your power supply's cooling fan works properly, i.e., ramps up when more power is demanded, and use compressed ("canned") air to remove any dust bunnies.
Since an RTX 2060 likely generates more heat than your previous graphics card, you may need to install an additional chassis cooling fan to blow in extra air which will help cool down your graphics card and will lower the air temperature your PSU is using for cooling.
