Please can anyone advise if there are any documents on how to upgrade this AIO memory as in how to open it up for upgrading.

I believe this is your system.  I spent some time looking but was unable to find anything useful, sorry.

The video does not show how to add memory.  You might ask the author

 

 

Looks like you could upgrade to 32gb
