Welcome to our HP User Forum!
Your HP EliteDesk 800 G1 SFF cannot 'see' an M.2 NVMe SSD in BIOS and use it as a primary (boot) drive. As a secondary storage drive, yes -like this HP EliteDesk 800 G1 SFF User did: HP EliteDesk 800 G1 SFF Performance Results - UserBenchmark.
The way to install an M.2 NVMe SSD as you found out is to utilize the white PCIe x16 (wired as x4) slot using a PCIe x16 to M.2 NVMe SSD adapter such as this one: Amazon.com: SABRENT NVMe M.2 SSD to PCIe X16/X8/X4 Card with Aluminum Heat Sink (EC-PCIE) : Everythi....
When you look through almost 5,000 HP EliteDesk 800 G1 SFF User benchmarks here: UserBenchmark: HP EliteDesk 800 G1 SFF Compatible Components, you won't find a single rig with an M.2 NVMe SSD as its primary (boot) drive.
Hope this was helpful.
