I know what the specs say, and the specs are incomplete. Trust me: an i7-7700K is very much compatible with an HP ProDesk 600 G3 MT:

One thing I would recommend, is to switch out your stock 65-watt CPU heatsink for a 95-watt rated heatsink, such as this one with p/n: 644724-001, which you should be able to purchase inexpensively, such as via an AliExpress Seller:
Hope this was helpful.

Welcome to our HP community forum!
You can upgrade your processor up to an i7-7700K. Other fine upgrade options: i7-7700 and i7-7700T.
With your 250-watt power supply, I would suggest a GTX 1650 graphics card.
4x8GB of DDR4 PC4-19200, 2400 MHz, Non-ECC, Unbuffered, DIMM (UDIMM), 288-pin RAM sticks, and make your primary (boot) drive an M.2 NVMe SSD.

Btw, your last post showed the specs for an HP Pegatron Odense motherboard (SSID: 2B47), which is not what is fitted in an HP ProDesk 600 G3 MT you referenced from the start:

Yes, there is a 400-watt power supply available with p/n: 942332-001.
An HP ProDesk 600 G3 MT was one of my upgrade projects: Solved: Upgrading HP ProDesk 600 G3 MT - HP Support Community - 8544105. Read through it carefully and see what will work for you.
