How many slots NVMe, does this workstation have on the motherboard?

If you look at the motherboard illustration in chapter 4, page 51 of the service manual, it shows 3 NVMe SSD locations.

 

#25, #19, & #20.

does have 3 x M.2  as says here:

That's the manual on the Z2 G9 user guides page.

 

I don't even know if it references the model number in the manual.

There is actually only one reference to the model number in the manual.

 

You can find it in chapter 6, page 90 of the service manual, around 2/3rds down the page.
