I purchased an hp-z440-workstation with 240GB SSD from ebay and wanted to replace the SSD with a 1TB SSD,

Given, the PC belonged to someone else, is best to do a Fresh install of Windows 10 Pro on 1TB SSD, right?

After this, the small SSD i can format it and put it back, if there's space in the PC...?

Given the fact that the PC has 4 cores cpu/quadro/32GB Ram, is any benefit install Windows 10 Pro OS for Workstations...? If find it cheap on eBay

Yes. It could be virus-infected, and might have a RAT ("Remote Access Tool") installed, to allow the previous owner to connect to it, over the Internet.

Yes. You could use it as an automated  "backup" device for your personal files. 

Given that the SSD has no moving parts, you should be able to find "someplace" to locate it.

Under the assumption that Windows 10 was previously installed and activated, you have the right to re-install the same version of Windows 10.  The Windows Installer will "call home" to Microsoft, to retrieve the 25-character product-key, and should automatically activate.

Given the fact that the PC has XEON four cores CPU/Quadro/32GB Ram ECC, is any benefit install Windows 10 Pro OS for Workstations...? I find it cheap on eBay or upgrade Windows 10 Pro OS from Windows 10 App Store

somehow i suspect that you will not actually be buying this (310.00 USD), so it's a moot point

and no you will not find a LEGAL copy of workstation for sale cheap on ebay

and no the upgrade from normal Win 10 to workstation is again not cheap

Last, if you had taken the time to perhaps read the microsoft web site for information on windows for workstations you would not have posted your question as the MS site is quite detailed in information on workstations features/benefits/pricing
