I have a device: HP EliteOne 800 G2 23-inch Touch All-in-One PC

Can I add a graphics card to the device?
The device works fine in everything except games, and I want to add an external graphics card?

Your computer is simply not meant for gaming.  There is not enough power.  Here is the Maintenance and Service Guide for the computer: http://h10032.www1.hp.com/ctg/Manual/c04831109

 

Look at Pages 68 and 69 for the layout of the two possible motherboards for your computer.  One is for LVDS (Low-voltage differential signaling) this is designed for discrete video cards and the other is for UMA (Unified Memory Architecture) designed for video memory integrated into the motherboard.

 

In the Product Specifications it shows 4 discrete video cards: https://support.hp.com/us-en/product/hp-eliteone-800-g2-23-inch-touch-all-in-one-pc/7633339/document...

 

I believe that these have to be ordered when you buy the computer and installed at the factory.  There is no video card slot in the motherboard diagrams.
