I currently own the aforementioned PC.  I was hoping to get some insight as to whether the current Odense2-k motherboard is capable of swapping the current GTX 1060 card out for an upgrade to a 1660.

Yes.

 

The HP 1060 and Nvidia reference 1660 are about the same length.

 

The 1660 requires a 450 watt power supply with one eight pin PCIe connection. Check your HP 500 watt power supply for an eight pin connector. The HP power supply should have this connector.

 

Disable Secure boot and enable Legacy support (Link) in the BIOS before installing the 1660. Look at "What if the PC does not boot after installing new hardware".

 

Uninstall the current graphics drivers before installing the new card.
