Can I please get some suggestions for how to hookup two monitors to this gaming desktop? There appears to be only one HDMI port and no VGA port. Not sure if I can buy a converter to convert HDMI to USB and plug the USB into the PC or not. Maybe there's a better solution for the second monitor?

A standard DP to HDMI cable will do the job. There are few versions, please use HDMI version 2.0 to get higher resolution, For example

All good computer shops should stock those cables (from .5m to 5m).

The VGA port is disabled due to machine has NVIDIA GeForce GTX 1050 (2 GB) card but the NVIDIA GeForce GTX 1050 (2 GB) has Rear I/O connectors: Dual Link DVI-D + HDMI + DisplayPort which supports up to three displays at the same time.
Does your second monitor have DVI or DisplayPort ? You can connect it using DVI or DP port, no need to use an adapter.
