Hi!
As the headline says, what PSU is used in the HP Pavilion Gaming Desktop 790-0815no? I've heard it's one of HP's own 500W PSU's, but there seems to be different models.

According to the specs, it is an HP 500w Gold PSU in that specific model. The PSU will be made from a third party source specifically for HP.
Is that what you needed to know?

Yes, that's an acceptable answer. I don't know what PSU to compare it to, but it looks like a decent quality PSU.
On another note: After running Speccy on the PC, I noticed it comes with a 4GB GTX 1080 and not an 8GB as advertised on both HP's website and the place where I bought it. Also, the RAM runs at 1333 mhz and not 2666 mhz... It seems kind of shady to me.

That is normal for Speccy.
Your ram is DDR4. DDR stands for double data rate. Take 1333 and double it = 2666 Mhz.
If you open GPUz, it will show you have an 8 GB GTX 1080.
See the example below, it does the same thing on my system...
