do i need a better power supply and which one?

If you have the 500W PSU, you probably have to upgrade, which would be easy in your case as the MB is using standard ATX 24pin. The other thing is sizing, measure and compare with the 3080 you want to buy, some of them a quite long.

I wouldn't use the word stupid, but 3080 would put you in a bottleneck a bit, buy how much - it really depends on what you are comfortable with and your specific situation.
Personally I would go for the 3070 in your case, but that's me. If you have the money for 3080, why not, you can later always replace the rest of the computer hardware and still use the 3080.

If you had the K model I would say sure go for it. Since it’s the 8700 non K. I would pass and match it up with a 3070 instead. Also you need a bigger psu for the 3080. 500w is not going to cut it and they recommend 750w.
