HI,

I am trying to upgrade the storage of my HP OMEN 17-cb1097nr and I have been looking at the Corsair MP600 Pro XT 2TB, but with the size of the heat sink, how would I know if it(or another with raised heatsink) will fit in my laptop. 

How would I find out what would fit(size-wise) in my laptop?

That wold be too thick and your machine won't run at that speed. Your machine supports  PCIe-3 × 4

Where can I find that information and the max supported specs for my laptop?

It is difficult to find what hardware is supported for any particular upgrade.
