When I went to replace the thermal past on my cpu and gpu I noticed the empty bay that looks like a cd/DVD bay. Is it possible to add a 3rd ssd in this bay?

There are third party solutions that should work for your model. HP does not supply them.
But you would need to verify the Sata connector is soldered to the motherboard first. Sometimes it might not be there if the unit did not come with a DVD drive preinstalled.
Here is an example of an adapter... https://www.amazon.com/Caddy-Omen-17-an000nr-Through-17-an1XXnr/dp/B07H3F1L53
Also, those adapters should have a tiny switch that has to be switched on to allow the motherboard to recognize it correctly.
