Well I have the HP Pavilion Gaming - 15-dk0xxx and it has 8gbs of ram and I want to upgrade and put a 16gb stick in it to make the total ram 24gb. Would that work?

Below is the link to the Crucial memory report for your notebook.
https://www.crucial.com/compatible-upgrade-for/hp---compaq/pavilion-gaming-15-dk0051wm
It will tell you how much memory your notebook can take, and offer compatible memory upgrade kits.
I would stick with the 2666 MHz kits offered.
Below is the link to the service manual, where you can find the memory removal and replacement procedure.

Crucial said I can handle 64gbs but I only want to upgrade to 24gbs. I am very wary about that sort of thing because HP only says that it can go up to 16gb but I have seen multiple people say that it can go up to 32gb and now I see 64gb. I am trying to be very careful with what I choose because I do not want to fry my motherboard. So I thank you for helping me out.

You're very welcome.
You wouldn't fry the motherboard.
The PC would boot up and work fine, or it wouldn't boot up. Worse case scenario is you wasted some money.
The only reason I wouldn't upgrade to 64 GB is because of the huge expense.
You could buy a cheap notebook PC for that price!
If you want to go to 24 GB which isn't supported according to the manual either, then I recommend you go to 32 GB for two reasons.
You don't have to do it right away either. Get the 16 GB chip and someday, get the other one.
1. The obvious 8 GB more memory.
2. The not so obvious...with one memory chip and an empty memory slot, the memory runs in the lower performing single channel mode. With memory installed in mismatched, capacities such as a 16 GB chip plus an 8 GB chip, the memory runs in single channel mode.
But with two memory chips of matching capacities (2 x 8 GB, 2 x 16 GB), the memory runs in the higher performing dual channel mode.
