I just recently bought the OMEN 17-cb1xxx model, love the computer, but would love to attach two monitors to it. Will the Cable matters super speed adapter 1440p for windows (supports DVI/USB3 to DVI) work on my model to convert my USB port to display two additional monitors?

What is your HP OMEN 17-cb1xxx ? I know my Omen is not the same with other Omen's same series. I only use my Omen once or twice a month and I can connect 2 external monitors using my old DisplayLink Certified USB dock. I don't know your machine therefore I can't comment on the adapter.
If you wish to have 2 or more external monitors (and notebook monitor - total 3), please enter your requirement on the following link and it will find for you few USB-A DisplayLink Certified options on market today including some HP products:

or try following HP docks
