Product: HP Officejet Pro 8600
Operating System: Microsoft Windows 10 (64-bit)

Somehow while setting up my HP 8600, I set up a network called  HP-Print-5E-Officejet Pro 8600. When I display the available Networks, it displays as Open. How can I get rid of this network?

You have Wireless Direct turned on in the printer.  Disable Wireless Direct in the printer via the front panel.
