My printer has been working fine for a few years then suddenly it came up with an error saying the installed cartridge isn't compatible.
I changed the cartridge for a brand new one that HP have sent to me as part of my instant ink subscription but it won't recognise the cartridge.
Just keeps giving me the error - "Remove and reinstall the indicated ink cartridge making sure it is correctly installed"
Anybody got any ideas for how I can solve this issue?

I understand you are not able to use the Instant Ink cartridge. Install one ink cartridge and check for the error to identify the defective one.
Check if the ink cartridges are properly inserted in the printer, you may refer to - Replace HP inkjet printer cartridges
