Trying to enrol in Instant Ink but after inputting my printer code I get error message 'Server Problem, try again later'.....I realise its Sunday but have been trying most of the afternoon without success. Is this due to the fact its a Bank Holiday weekend or what?

No, its not cause of Sunday or bank holiday.
