I unenrolled in instant ink. I've changed my mind and decided to reenroll, however, each time I try to enroll the printer, I do not get enrollment options, the screen goes back to the overview page. I uninstalled and reinstalled the printer with no change.

I see that you are not able to re-enroll the printer in Instant Ink.
Make sure you have followed the steps mentioned in this document - Enrolling in HP Instant Ink
