I use an HP OfficeJet 6950 All-in-One

 

currently pay for Instant Ink but if i cancel instant ink will my printer still work? will i be able to simply buy the ink cartridges when i need them instead of subscribing to "instant ink"?

Yes, you can use Original HP cartridges for your printer after you cancel HP instant ink subscription. You will have to wait till the end of the billing cycle.
