We are struggling with setting up MAC receivers and using their screen resolutions. With Imac receivers they have screens that are 5120‑by‑2880 which is larger than the NVidia cards we have can do. Also often people have uneven screen sizes so maybe the imac size and then a 3840 x2160 as well. We have dual monitor HD senders but we struggle to find a way of making the desktop just span the 2 mac monitors. So is it possible to make the receiver span 2 different resolution monitors on a mac for instance?

IS this all because the iMAC is a resolution we can't do from the sender - and what would anyone suggest.  We are running avid so we can't just have any graphics card.

You mention the sender has two HD displays attached to it.  The sender will be limited by the displays resolution.  Have you tried adding a custom resolution via the NVIDIA control panel or possibly going headless and loading an EDID file from a display that covers the resolutions that you need on the sender?  What is your sender configuration, please include OS build and version, graphic card and driver version.  There is some documentation in the user guide for setting up Macs with external display attached.  See the latest 20.1.2 release user guide.  Pages 39 through 47 covers all of the display configurations and resolution matching.  Page 40 has a specific note on the Mac Receiver in the Note Section.
