I'm getting an error that says the cartridges are incompatible but they are the original cartridges that came with it. I've run an update, reset the printer and it's still giving me the error.

Are these the setup ink cartridges that came with the Printer? Are you setting up the Printer now?

They are the original that have worked fine but then all of a sudden started getting the error.

Did you try the steps given? Also, try another set of inks to see if you get the error with that.

Did you try the steps given? Also, try another set of inks to see if you get the error with that, just to check if it's a cartridge issue.
