Microsoft Windows 10 (64-bit)

HP Officejet Pro 8600 Display panel is fading out.  Printer functions well. Just cannot read display options.

I understand you have display issues on the printer. This could be a hardware issue, let us isolate the issue first-

 

Update the printer firmware

Download available firmware updates from the HP website

With the printer on and connected to the computer, go to HP Customer Support - Software and Driver Downloads, and then identify your printer. Look for and install any available firmware updates.For more information, go to Updating or Upgrading Printer Firmware.

 

Also, check if there is any physical damage on the display. If there is any film/covering on the display remove it.

 

Share a picture of the display for further assistance.
