We have 2 issues: 1) Molly's Apple laptop will not print double-side to our HP Officejet Pro 6830, and it adds an extra blank page for every page printed. 2) Clifford's Windows laptop prints double-sided or single-sided just fine, bit at least once per day the printer simply goes "offline" requiring me to close down all open programs, reboot, reopen my saved work, then print.

I have gone through your Post and would like to help
For the double sided issue with Mac, I suggest you install the printer using Airprint
Please ensure your Mac and Printer have the latest updates

After checking all those details and if the Ping Test is successful, Remove and Re-add the printer using Airprint. AirPrint is an Apple technology that helps you create full-quality printed output without the need to download or install drivers.
1.) Click the Apple menu, click System Preferences, and then click Print & Scan or Printers & Scanners.
2.) Check if your printer name displays in the Printers list, If your printer is listed, click the printer name, click the minus sign to delete the printer.
3.) If you see multiple printer queues for the same printer, remove all extra printers by selecting them one at a time, and then clicking the minus button at the bottom of the list.
4.) Click the plus sign , click Add Printer or Scanner, click the printer name.
5.) Click the Use or Print Using menu, select AirPrint or Secure AirPrint in the pop-up menu. Then click Add.
6.) Try double sided
For the issues with the Windows PC, run the HP Print And Scan Doctor from this Link: ftp://ftp.hp.com/pub/printers/hppsdr/patches/HPPSdr.exe
Run PSDR v5.0.2
Once the PSDR detects the Printer, it will show up the IP address and Software Status.
Select the correct Printer and click on Next.
PSDR will check if the Printer is on the Network and communication between the PC and the Printer. Once the connection check is done, click on Fix Printing
Once PSDR goes through all checks and automatic fixes, click on Print a test page.
Regardless if PSDR printed the test page or not, click on “NO PRINT”
PSDR will then notify you that there is an update available, click on continue, and PSDR will apply the patch and ask for a reboot.
Post restart the PSDR will run automatically to check for more issue. If no issue found close PSDR.
