Is it possible to disable the sleep mode on a Laserjet M806 ?

Most enterprise products do allow this option. Make sure that your firmware is up to date and then go into the embedded web server of the printer (type the printer IP address into a browser address bar) and look for the energy settings.

I've already taken a look at the web server. The only option i found, is to set a sleep timer setting up to 45 minutes.

What firmware type and revision are you running? They did make some adjustments to energy settings with later revisions. This is a screenshot of a Similar generation printer running current firmware revision 4.10.0.2  (806 would be 4.10.0.1). While you cannot entirely disable the sleep mode, you can disable the auto-off function. You could always set a wake at start of day in the schedule.
