I'm trying to find any documentation on Versions of Poly MTRoW that can not be upgraded to Windows 11.  Does such a document exist?

At present, there isn’t a specific document listing the versions or models that cannot be upgraded. However, Microsoft provides detailed guidance on supported operating system versions and hardware compatibility for Microsoft Teams Rooms on Windows (MTRoW).
 

You can refer to the official Microsoft documentation below for more information:

If your Poly MTRoW device meets the Windows 11 hardware requirements (such as TPM 2.0, Secure Boot, and a compatible processor), it should be eligible for the upgrade. I’d recommend checking your device specifications against Microsoft’s Windows 11 compatibility criteria on their official site for confirmation.
