Hi, I assume this older printer isn't capable of connecting to an optimised wi-fi signal (where 2.4 & 5 G Hz ranges are combined), only the 2.4 G Hz on it's own. Or is their a way of modifying the Wireless mode (currently on 802.11b/g/n Mixed) without messing with other devices liek SKY that are happily grabbing the 2.4 signal from the Optimised signal.

The printer cannot connect to a combined network. You need to have separate SSIDs for both the 2.4GHz and the 5GHz network. 

 

Contact your ISP to give them separate names and then connect the printer to the 2.4GHz network.
